Southwest Quinoa Salad

This recipe is great for busy nights and can be done in less than 30 minutes.

Ingredients:

Quinoa salad:

  • 1 ½ cups dried quinoa
  • 1 cup fresh corn
  • 1 cup black beans (drained and rinsed)
  • 1 diced red bell pepper
  • 1 cup diced red onion
  • 1 jalapeno seeded and sliced

Dressing:

  • ¼ cup of olive oil
  • ¼ cup fresh minced cilantro
  • 2 limes (juiced)
  • 2 tsp cumin seasoning
  • Salt to taste

Directions:

Rinse the quinoa and set aside. Have 2 ¾ cups of water to a boil and add the quinoa. Reduce the heat to a simmer and let it cook for about 20 minutes. When the water has gone, the quinoa is ready. Once ready, transfer quinoa to a bowl and fluff it up with a fork.

As the quinoa is cooking, mix the ingredients for the dressing and set aside. Slice and chop your vegetables. After the quinoa is cooled, add the vegetables, black beans, and dressing. Mix it all up and place it in a covered container in the fridge. Serve this salad cold with fresh avocado on top.

This salad is easy to pull together and is a great choice to add to your list of clean eating meals.
