BBQ Tofu Stuffed Pita Pockets

This is a great way to use up any leftover vegetables and tofu you may have in your fridge.

Ingredients:

  • 1 Tbsp olive oil
  • ½ cup chopped white onion
  • 12 oz firm tofu (pressed and cubed)
  • ½ cup low sugar BBQ sauce
  • 2 medium-sized pita pockets halved
  • ¼ cup mayo
  • 2 cups shredded romaine lettuce
  • 1 large shredded carrot
  • 1 cup alfalfa sprouts or microgreens

Directions:

In a large pan, heat the tofu over medium heat for about 30 seconds. Add the olive oil and onion and cook for about 5 minutes. Stir it around frequently and look for the onion pieces to become translucent. Add in the tofu cubes and cook them for about 3 minutes. Stir occasionally as you wait for them to begin to brown.

Reduce your heat to medium-low and stir in the BBQ sauce. Cook for 5 minutes more up until the tofu is coated in the sauce, and the sauce has started thickening. Take away from heat and let cool slightly before serving in your pita pockets. Serve and eat immediately.
